How Do You Double a Recipe?

Multiply every ingredient quantity by 2 and keep the method the same. That's the whole trick — the fiddly part is the fractions, and the traps are pan size and cooking time (covered below). Here's a doubled cookie recipe as a worked example:

Notice the butter: 6 tablespoons doubled is 12 tablespoons, but since 16 tablespoons make a cup, it's far easier to measure ¾ cup once than to count out 12 spoonfuls. A good doubler converts to the friendliest unit for you.

Three Things That Don't Double

  • Cooking time. Two trays of cookies bake in roughly the same time as one (rotate them halfway). A doubled casserole or cake in a deeper dish needs maybe 15–25% longer — not twice as long. Keep the oven temperature the same and start checking doneness at the original time.
  • The pan. Doubled cake batter in the original pan bakes up with burnt edges and a raw middle. Use two pans of the original size, or one with roughly twice the area. On the stove, a crowded skillet steams food instead of searing it — brown doubled meat in batches.
  • Salt, chili, and strong spices.Doubling leavening like baking soda is fine at 2×, but seasoning intensifies. Start with about 1.5× the salt and heat, then taste near the end and top up. You can always add more; you can't take it out.
